Texas Cheater Pork Chops

Chef Fire up the grill. Hickory smoked pork chops that are moist and tender. Amaze your friends! My brother calls me and tells me about using Old Bay on his pork chops. I introduced him to Old Bay during a cookout where we cooked shrimp using an east coast recipe. He tells me all the steps he followed and says you have to try this. The same weekend I am watching a BBQ contest on TV from Memphis. A new term comes to me, Texas Cheater. Texas Cheater means to wrap the meat in foil to keep in the juices. I simply put the two ideas together. These chops are a frequent request at my house.

INGREDIENTS

8 Pork Chops
Sweet Baby Ray's BBQ sauce
Old Bay spice
1/2 cup Hickory Chips

PREPARATION

Preheat a charcoal or gas grill and soak hickory chips in water. While the grill is preheating, rub the Pork Chops with Old Bay. Place the drained hickory chips in foil and wrap tightly. Use a fork to pierce the foil so that the chips can smoke. Place the hickory foil packet on the grill over direct heat. Watch for the smoke to begin in about 10 minutes.

After the hickory begins to smoke, place the chops on the grill in indirect heat and close the grill for 10 to 12 minutes. Remove the chops and place on a large piece heavy duty foil. Wrap the chops in the foil and tightly seal the top and sides with folds. Place the wrapped chops over indirect heat and close the grill for about 20 minutes. This is the Texas Cheater technique which results in moist and fully cooked chops.

This is the most important step. Watch these chops like a hawk because you have come way too far to blow it now. Remove the chops from the foil and place over direct heat on the grill. Did I mention to watch them like a hawk? Baste the tops with Sweet Bay Ray's BBQ sauce and immediately flip the chops and repeat the basting on the bottom of the chops. Close the grill for about 3-5 minutes (depends upon your grill heat now). Don't walk off, hover over your master piece. Then give the chops a final turn close the grill for about 3-5 minutes. Use your judgment on the final cook time. My family likes caramelized BBQ sauce.

Pull the chops off and serve sizzling with lots of napkins and a Diet Mountain Dew. Makes 4 servings.
