Wam Bam Thank You Ham And Turkey Sandwich

Chef Yes this is another Uncle Joe creation. We stopped in on one our many visits to Kentucky, I can't remember if this was a Kentucky Derby trip or another purpose. Joe always makes sure we have a place to lay our heads when we travel through on our Interstate 64 route.

So I'm sitting in his living room and Joe fires up his gas stove top to preheat his favorite skillet. "Hey" he asks, "Do you want a sandwich?" So I moved up to see what kind of creation he had up his sleeve. So I am about to describe the steps Joe took to make this sandwich.

INGREDIENTS

1/2 lb. Thin sliced Boars Head Black Forest Ham
1/2 lb. Thin sliced Boars Head Cajun Turkey
Hellmann's Light Mayonnaise
Emeril's Dijon Mustard
Extra virgin olive oil
Rosemary
Sea Salt
Whole Grain Oat Nut Bread (Uncle Joe likes 9 grain or whole wheat bread the best)
Sliced Jalapeno Cheese

PREPARATION

Preheat an iron skillet coated with olive oil (medium low heat). Cover the bottom of a dinner plate with extra virgin olive oil, add some sea salt and rosemary to the oil. Use this oil to "butter" one side of a slice of bread before grilling. Heat the sliced turkey and ham in the skillet for about 30 seconds and then turn for about another 30 seconds. Pull the meat from the skillet and put a slice of bread in the skillet butter side down. Now place the warmed meat on the bread add the mayo, mustard, cheese and top with the second slice of bread butter side up. Set your timer for about 2 1/2 minutes. After the time expires turn the sandwich to grill the other side for 2 1/2 minutes. Serve with ice cold milk.
